                             So my husband has this awesome friend that has a couple peach trees. We were blessed with a five gallon bucket of homegrown peaches. Now, I hate when fresh items go to waste. I admit that Adam and I don't eat as much fresh vegetables that we should and we do let things go to waste more than we should. I was staring at this HUGE bucket of peaches, thinking what can I do with it. I love a good peach cobbler. I am a Southern woman who was raised on some simple eats.
                          I thought of canning some peaches, because I have a CRAZY amount of jars, but I don't have pectin and I have never made jam/jelly out of peaches. I tried once when I was little but never ever really made some. Although that is a challenge I would like to learn some day. The only canning I have ever done is where I made fresh green beans (also first time) and the heat from the beans seals the jars without them being boiled. Because the jars aren't boiled I put them in the fridge instead of the pantry.
So the cutting of the many peaches took about an hour..and was really wet and some not as ripe. But I did it finally. :)

                               There were some worms in them, kinda grossed me out..but I got it. Depending on how many worms there were and how black the peach was I took a spoon and spooned out the worm guts etc. Ewww
                                         
Finished finally..one big bowl full of cut up peaches..half have skin, and half do not have skin.

So after I baked the peaches with brown sugar, cinnamon, flour, and vanilla at 425 for about 10 to 15 min. I searched for a good crumble...but I am all about simple, and I really didn't want to use another bowl. So I decided on using cake mix. I don't know about you but personally I love a good dump cake. Not the best thing for you health wise, but it is so simple, easy, and yummy. I grew up eating that as a easy, relatively cheap dessert.



I spread the cake mix over the three pans. Covering with plenty of butter. Butter can only make it better right! :) I turned down the oven to 350 and put in for 30 or so minutes. Checking until the butter is melted and a little brown. Thus completing my peach cobbler..just checking it and my butter is not melting evenly (duh on peaches) so there is some loose cake mix. It will still be yummy but sometimes recipes don't go as planned..oh well.. on to the next :)
